Defining Sun-Dried Maocha (Saiqingmaocha): The Essential Foundation of All Pu-erh Tea

In Chinese national standards and connoisseur tradition, authentic Pu-erh tea is strictly defined as tea produced from Yunnan large-leaf sun-dried tea leaves (Yunnan Dayezhong Saiqingmaocha). But what exactly is Saiqingmaocha, and how is it crafted?

The Technical Flow of Primary Processing

The transformation from freshly harvested mountain leaf to finished loose maocha proceeds through four critical stages:

Fresh Leaves (鮮葉) → Pan-Fixation (殺青) → Leaf Rolling (揉撚) → Sun-Drying (日光乾燥 / 曬青) → Finished Maocha (曬青毛茶)

Why Solar Drying is Mandatory

Unlike Green Tea—which employs high-temperature oven drying (Hongqing) or pan parching (Chaoqing) to completely halt biochemical change—Pu-erh requires open-air highland sunshine:

  • Sun-drying operates at gentle ambient temperatures (typically 35°C–45°C on bamboo drying beds under Yunnan’s intense ultraviolet radiation);
  • This solar exposure dehydrates the leaf without destroying the latent endo-enzymes and beneficial microflora;
  • It preserves the living cellular foundation necessary for subsequent microbial fermentation (in ripe Pu-erh) or multi-decade natural cellar maturation (in raw Pu-erh).

Without genuine Saiqingmaocha as its starting material, a tea cannot legally or organoleptically be called authentic Yunnan Pu-erh.
