For example, today we want to discuss a small issue: sealed or unsealed? Pu-erh tea is active; it is constantly exchanging energy with the outside world. What are the pros and cons of sealed versus unsealed storage? How should one choose? Let’s see how Shuang Chen Pu-erh answers this.
Q: When storing Pu-erh tea, to prevent moisture, should the tea warehouse be kept completely sealed and unventilated throughout?
A: No.

When humans stay in a room for too long, they want to walk to the window, breathe the fresh air from outside, and feel that sudden burst of freshness, which immediately refreshes the mind and uplifts the mood. Humans are like this, and so is tea. Tea warehouses used for storing Pu-erh must be ventilated at appropriate times.
First, ventilation can effectively prevent the development of “storage odor.”
During the post-fermentation stage, Pu-erh tea continuously releases metabolic “breaths.” This metabolic “breath” needs to be expelled timely through scientific means. Some tea warehouses lack this awareness, allowing these “breaths” to accumulate. Over time, off-flavors develop. This is what the market refers to as “storage odor.”
To avoid this “storage odor,” we must pay particular attention to ventilation during daily warehouse maintenance. Only through timely ventilation can the tea remain full of energy—an energy provided by the oxygen and active enzymes in the fresh air. Of course, this places high demands on the air quality of the external environment. For instance, Shuang Chen’s ecological tea warehouses require a surrounding vegetation coverage of over 50%, and the warehouse must be far from any sources of odor pollution.

Second, ventilation can regulate the temperature and humidity of the warehouse.
Ventilation is also an important means of regulating the warehouse’s temperature and humidity. Taking summer as an example: in the morning or evening, when the outside temperature is lower than that inside the warehouse, one can choose periods with good air quality and humidity levels that are lower than or equal to the indoor humidity to ventilate. In this case, ventilation acts as a cooling method.
The ideal temperature range for storing Pu-erh tea is 18°C to 32°C, with a humidity range of 50% to 75%. Deviating from this range will affect the aging efficiency of the Pu-erh and prevent it from undergoing healthy fermentation to achieve the “aging into fragrance” effect.

Third, ventilation helps the warehouse adapt to seasonal changes.
The “aging” process of Pu-erh tea is an enzymatic reaction between its internal constituents and the oxygen and beneficial microbial flora in the air, occurring under suitable temperature and humidity conditions.
Ventilation can replace the low-oxygen air within the warehouse and enhance the exchange of active enzymes between the tea products stored inside. This allows the micro-environment of the warehouse to change moderately alongside the seasonal shifts of the macro-environment, enriching the types of beneficial microbes involved in post-fermentation. This makes the post-fermentation more layered and the resulting flavor and mouthfeel richer and fuller.
Therefore, excellent storage requires strict control of ventilation based on the environment, climate, and specific warehouse needs, allowing Pu-erh tea to experience the natural essence of the changing seasons.

—

Author: Lam Sam (LamSam), the Old Tea Head
ZENTEA MANOR
Alliance Supply Chain Services Limited
Unit 902-3, 9/F, Mini Cube, 10 Sam Chuk Street, San Po Kong, Kowloon, Hong Kong
www.zentea-shop.com Email:info@zentea-shop.com

Pu-erh tea storage involves many elements, and professional details cannot be overlooked.
